Low Glycemic Lettuce Wraps

Low Glycemic Lettuce Wraps

INGREDIENTS:

Ground Turkey – 120 grams
Mushrooms – 35 grams
Lettuce – 60 grams
Tomatoe – 30 grams
Avacado – 50 grams
Jalapeno – 20 grams
Cilantro – 1 Tbsp
Low Fat Mayonnaise – 1 Tbsp
Habanero Hot Sauce – to taste
Extra Virgin Olive Oil – 1 Tsp
Sea Salt
Pepper

PREPARATION:

1.  Chop up mushrooms, jalapeno (keep both separate), tomato, avocado and cilantro.

2.  In a small bowl combine low fat mayonnaise and habanero hot sauce.

3.  In a non-stick pan add 1 tsp EVOO, mushrooms, jalapeno and ground turkey.  Saute until cooked.  Add sea salt and ground pepper to taste.

4.  Place lettuce cups on a plate, divide turkey mixture evenly and top with the chopped tomato, cilantro and avocado. Finish off the lettuce wraps by pacing the habanero mayonnaise on top.

It’s the morning of day (27) on the Ultra Lite program and I’m now down another .5lb, 13lbs total – 161.5lbs.  My original goal weight was between 160-165lbs and a body fat of 10%.  My estimate is that I will have to hit 155lbs to reach 10%.  Diego Sanchez, watch out.

3 weeks to go until my Sonoma wine tasting trip, then 4 weeks until we leave for an all inclusive trip to Puerto Vallarta.  My goal as of today will be at 10% body fat by the end of March and somewhere between 155lbs and 160lbs.  I will have to add 45-90 minutes of cardio, per week into the equation, along with 3-4 hours of weights.  This is very doable.  I can’t wait for next months pictures.   

Ultra Lite – Day 25

It’s the morning of day (25) on the Ultra Lite program and I’m now down another .5lb, 12lbs total – 162.5lbs.  I am totally amazed that I could drop 12lbs in just 25 days, and this is for a guy who really didn’t need to lose weight.  I know people are looking for fads like “HCG injections 4 weight loss.” This is for life folks – NOT A FAD!

Ultra Lite – Day 23

It’s the morning of day (23) on the Ultra Lite program and I’m now down 11.5lbs – 163lbs.  My body fat is down to 13%.  I have till March 5th to see where I’ll end-up.  Then 3 days of wine tasting in Sonoma, followed by 7 days at Dreams in Puerto Vallarta.  Ultra Lite when I get home.

Ultra Lite – Day 19

It’s the morning of day (19) on the Ultra Lite program and I’m now down 11 lbs – 163.5 lbs.  Eleven pounds may not sound like that much until you try walking around with two five pound bags of sugar, for 8 hours.  Try it for just 10 minutes and see how you feel.

Here is an interesting observation: Since I’ve been on this program I have been sharing my story with everyone I know, meet or have as a friend on the net.  You know how many people have said, “you know, I would like to lose a few pounds too and get back into shape?”  One!  And she signed up today to complete the program.  My conclusion, which may be right or wrong, but I feel it’s more correct than not – most people are satisfied with their current weight and level of health.  Either that or they have gotten so used to how they look and feel that change is not in their reality.

You would think that most people would want to live a long and healthy life, and take proactive steps to guarantee that it would be that way, when they’re seniors.  For some reason it’s not working out that way.   As an example: Most of my friends are in there mid-forties and have known me for over 20 years.  The number of those friends that has asked me for advise or help, one or two.   Now maybe it’s because they think of me more as their buddy, than as a doctor, but they know what I do, how I look and how I act.  So, really there are no excuses.

That’s my two cents for the day.
